Vegetarian La Sagna

Saute in olive oil mushroom, onions, add two cloves garlic, add 1 stalk celery, 1 carrot,

mushrooms salt and pepper to taste, add two 32 oz. tomatoes, 4-6 basil leaves (T), to 2

dry bay leaves,  simmer 1 ½  hr.  Chop vegetables, puree after cooking if desired.  Add 4

T unsalted butter.

Zucchini and yellow squash, spinach

Layer

Little amount of sauce

Noodles

Small amount of Tomato Sauce

Veggies

Tomato sauce

Cottage Cheese or ricotta

Mozzarella cheese

Another layer

If you use Mozzarella or Ricotta be generous with sauce

Bake 45 minutes to hour at 350 degrees covered if desire
