Woodbury's Apricot /Blueberry Muffins


1 c. quick rolled oats
1 c. buttermilk/ or can use regular milk
1 egg
1/2 c. Brown Sugar
1/2 c. oil
1 cup white wheat flour or (1/2 c. white flour +1/2 c. wheat flour)
1 tsp Baking Powder
1/2 tsp salt
1/2 tsp soda
3/4 c. chopped dried Apricots
1/2 c. chopped Walnuts
3/4 c. frozen bluberries
 
Stir in bowl by hand until mixed well.  Pour batter into muffin tins lined with paper muffin cups.  BAKE at 400 degrees for 15 -20 minutes.  (Yields 12 Muffins.)
