1 cup margarine
2 cups sugar
Grated peel of 1 lemon
1 Tbs. Lemon Juice
4 eggs
3 cups All Purpose Flour
1/2 tsp. Baking soda
1/2 tsp. salt
1 cup milk
1 cup walnuts chopped
Preheat oven to 350 degrees. Grease and flour three 5 3/4”x3 1/4” loaf pans. In large bowl blend butter, sugar, lemon peel and juice. Beat in eggs. In medium bowl sift together flour, baking powder, and salt. Add flour mixture alternating with milk and butter mixture stirring just to blend. Fold in nuts. Pour into pans. Bake 30-35 minutes for small pans, or until wooden toothpick comes out clean. Meanwhile prepare lemon glaze. Pour lemon glaze over hot loaf. Let seep in until cool, about 10 minutes, before moving from pans. Wrap in foil and let stand for 1 day before slicing.
Lemon Glaze: 2 lemons juiced
1 cup powdered sugar
Cook over medium heat stirring constantly until dissolved.
